Hey there! I’m Guillermo. I’m a food entrepreneur with experience building small-scale solutions where cooking, sustainability, and technology come together.
I’m drawn to how circular systems and tools can shape how we connect and stay in conversation with nature and with each other through food.

Myself¶
I am originally from Mexico City. I’ve studied different stuff like law, sustainability, and philosophy, and done a bit of fermentation, design, foraging, trading, etc, etc, etc…
I’ve lived in the Uk, Sweden and now Catalunya with my family.
Some Project in the past¶
_• Launched a web app to reduce food waste in restaurants by upcycling ingredients through fermentation
• Developed and operated a Mexican sous-vide food concept in Sweden
• Founded and ran a small chain of gelato shops, working with micro-producers and foraged native ingredients
• Worked on foodservice equipment development, menu engineering, workflow design, and operational tools for foodservice operators
